Like your Chix and Egg recipe. I have the David C book and what you did is a good adaptation. Egg was perf. Nice that a lot of recipes in that book are in grams, so easy to duplicate with a TM. I see you are linked to the Dani Valent book, but have you had a chance to actually see one yet? I have not, and my local dealer (TM Vancouver as I am in SF) wants 80 bucks plus shipping. Trying to figure out if worth it. I have a few books on my list (Christina Tosi, Joe Beef) which are so much cheaper….curious if you have seen it what your opinion is!!!

You stories never cease to crack me up! LOL! Trissa, I’m the opposite. I could never wait for food! Ok…maybe an exception in this case as I know how wonderful your sous vide machine and technique is.
