Like your Chix and Egg recipe. I have the David C book and what you did is a good adaptation. Egg was perf. Nice that a lot of recipes in that book are in grams, so easy to duplicate with a TM. I see you are linked to the Dani Valent book, but have you had a chance to actually see one yet? I have not, and my local dealer (TM Vancouver as I am in SF) wants 80 bucks plus shipping. Trying to figure out if worth it. I have a few books on my list (Christina Tosi, Joe Beef) which are so much cheaper….curious if you have seen it what your opinion is!!!
