I remember when my driving license was still a shot in the dark (this was probably after the second fail), I would day dream about the places I would go, and people I would see when I’d one day get my license. Each week, no fail, I’d ask my driving instructor two questions:
1. What was the most number of times someone failed under his instruction (he said ten)
2. Could we pass by the fish markets after the lesson so I could pick up some fresh seafood (the answer was always no)
I vowed that the first place I would drive on my own (when I finally passed) was the Fish Market. So last weekend, after many U-turns, detour here and there and a 30 minute drive (which would have normally taken ten minutes for a more skilled driver), I found my way to the Fish Markets all by myself! I was so pleased by my achievement and vowed that my next dish would be all sourced from there.
Blow Torched Scampi with Mango and Avocado Salsa
Serves 2
Ingredients
- 4 Fresh Scampi
- 1/2 mango, diced
- 1/2 avocado, diced
- 2 tablespoons olive oil
- juice of half a lime
- pinch of salt
- pinch of sugar
- fresh salmon roe
- Peel the scampi and set aside the shells for use in the future (you can freeze the shells and use for a bisque)
- For the salad, mix the mango, avocado, olive oil, lime juice, salt and sugar and leave to marinate for around 15 minutes
- To assemble, blow torch the scampi (if you don’t have a blow torch, you can poach the scampi in boiling water for 30 seconds and quickly blanch in iced cold water)
- Plate the salad and top with the scampi and salmon roe
By the way… Did you hear? Gourmet Magazine, published by Conde Nast, will be shut down by the end of the year. Looks like my collection will be even more valuable now! It’s a pity because it is such an institution but then again, the reason cited for the magazine’s demise was popular food shows on television and online sites (blogs?!?!).
I recently had a conversation with Lorraine from Not Quite Nigella (in my humble opinion, in a league of her own!) about how bloggers, despite their growing number were not yet “mainstream” … so now it strikes me as interesting how an institution such as Gourmet Magazine would shut down, partly because of online sites.
Just goes to show much much this industry in changing….
Lastly, tell me, do you like the new look? It took a while and a bit of tooing and froing (just like my trip to the Fish Markets) but I finally got a different look. Would appreciate the feedback!
These look lovely. I am going to be serving them at my next dinner party. Thanks.
Gourmet? I’m heartbroken. Was one of my favourite magazines when I lived in the US!
Hey Trissa,
Love the look ofyour blog!!! Scampi salad looks inviting! I’ll have to wait a couple of more months before I can try this out! I truly enjoy your blog!!!
Haha… I was under the lucky circumstances that I got driving lessons from my father in law!! Well, not always lucky to be honest, as he was not an easy instructor… But a very good one!!
I love your new look, very fresh and inviting.
Those scampi look absolutely delicious. Beautiful photo too!
Yep, I like the new format. It’s nice and clean and pretty!
Great dish too! I had some mango last night for the first time for ages and am hankering for more now.
I like the new look. It seems slightly wider, or maybe my eyes are just playing tricks on me! But I do like the new colour scheme and logo up the top right – something a bit French about the whole combination =)
Regarding the demise of Gourmet magazine and things going online, this is definitely the way all traditional media is heading so it’s a good thing that you are already in this space. If I were you I would be getting myself / my comments / my receipes / my opinions / my feedback / my advice on as many websites, blogs, forums, social media sites etc as humanly possible so to increase my following and establish my online influence! It could open up lots of opportunities for you.
I love the new look, Trissa! Everything looks very cool and pleasant to the eyes! I love the little spoon, fork, knife and plate banner. 🙂
Oh and the scampi looks absolutely delicious!
i’m so ridiculously pissed off about gourmet dying. i really hope and pray someone else revives it. no blog, no stupid tv show with some hot host or travel show can take the place of intelligent writing that you can comfortably read on the subway, bathtub or curled up on your couch. horrible. why couldn’t they get rid of stupid magazines like rachael ray or the new food network one?! you know what isn’t main stream – people who don’t need gimmicks to showcase food. i think the real demise is due to mainstream people – those who keep the food network alive as its content gets more dumbed down and more dumbed down. those who can’t concentrate on someone like jacques pepin because he’s just too relaxed and has no gimmicks.
sorry to vent, but i’m really sad about this. but that scampi salad could cheer me up.
OMG! I can’t believe they’re shutting down Gourmet Magazine! They had such wonderful recipes too and I love Sara Lee. 😦 This recipe looks fabulous though!
Hehe I love your second question. I’d do the exact same thing but it might be something like “Did you see that hat in the window? Can we do the parking test in front of that shop?”
Awww thankyou so much 🙂 Yes it’s very interesting indeed about Gourmet magazine! Wonder if it will happen here? It really reminds me of when the Internet started here and I’d have people saying to me “Oh the Internet, it will never last!”. Some people say that about blogs but there’s no evidence to support that that I can see 🙂
lovely new look Trissa! – and the dish looks awesomely fresh & delish
I love the new look Trissa. The looks delicious. I have a tiny little blow torch so I think I will need to upgrade before I make this. ehehehe
lovely photo. Looks delicious. I love scampi, mango and avocado so this is perfect for me. Thanks for sharing.
That’s very pretty. I love, love, love avocado. I’ll use prawns instead. I didn’t have the chance to see your blog before this new look. But I could say it’s very Trissalicious.
