Since my parents are in town, the highlights have been the nightly chats about “what to eat for dinner” with my Mom, aka the Blog Monster. We’ll go over my cookbooks and magazines and make a list of things we want to try out. The frequency and speed at which we change our minds, and ultimately, the dinner’s menu, is ridiculous. The other night for instance, as I sat at the foot of her bed, we flicked through one of my “food inspiration” binders and decided that we were going to make pasta, then changed our mind when she wanted to make fish in coconut milk, and then we canned the fish and decided to go for this Korean Fried Chicken recipe that I had printed from the Saveur website.
I mentioned that I had heard many great things about this so called “other KFC” and had wanted to try this for a long time. The Blog Monster skimmed through the piece of paper, nodding her head once or twice, as if in agreement with the recipe. “Yes, this is what we’re having for dinner tomorrow” she said.
So I’m day dreaming about having Korean Fried Chicken the whole day and manage to actually leave the office earlier than usual in anticipation of that meal. I get home and am greeted by the familiar smell of garlic, ginger and chili wafting through the air.
I do a double take when I see her pan frying pork ribs… remember, the original recipe is for DEEP FRIED CHICKEN.
“Come and have a look,” says the Blog Monster. “I’ve made that Korean recipe we talked about.”

Anyway, recipe confusion aside, her rendition of Korean Fried Chicken (also known as The Blog Monster’s Pork Ribs) is excellent. Seriously. I had no intention of posting this given the bad evening light but I ran to the laundry room to take a few shots. I just had to share it with you. If you are so inclined (and I am sure I will one day finally get to it as well), the original Korean Fried Chicken is on the link above. In the meantime, try this one instead!
Blog Monster’s Pork Ribs
Adapted from the Saveur website
- 5 cloves garlic
- 3 to 4 cm ginger, peeled
- 3 tablespoons soy sauce
- 3 tablespoons gojujang (Korean Chili Paste)
- 1 1/2 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon brown sugar
- 2 eggs, lightly beaten
- 85 grams flour (2/3 cups)
- 1 tablespoon cornstarch
- 1.5 kilos pork ribs
- Oil for pan frying
- Using a food processor, process the garlic, ginger, soy sauce, chilipaste, vinegar, sesame oil and brown sugar in a bowl.
- Add the eggs and place the pork ribs in the mixture. Allow to marinate for 2 hours
- Mix the flour and cornstarch together and dredge the marinated pork ribs in it.
- Heat the oil in a frying pan over high heat. Pan fry for around 3 to 5 minutes on each side until sticky, golden and slightly charred.

Made these last night! I get a little terrified with shallow frying white meat and there seemed to be a distinct lack of really meaty ribs in my vicinity so I slow cooked them and then turned up the heat for a last ten minutes. Completely wonderful! Nom nom nom.

This recipe looked sooo good, I just had to make it –two ways.
The first night, I prepared everything just as the recipe says, to the T. The flavor was good, but the ribs were tough and disappointing. Everyone has their preference on ribs, but for my family, 3-5 minutes on each side doesn’t come close to the sweet, tender, fall of the bone style we prefer.
Soo, the second night, I let the ribs sit in the blog monster’s marinade all day and then..
-Cook at 350 for 10-15 minutes on each side.
-Remove ribs from oven, spread another layer of blog monster sauce on and do another 10-15 minutes on each side, letting the marinade soak into the meat and caramelize, but not burn!
-Remove ribs, turn oven down to 250.
-Spread another layer of the blog monster’s sauce on the ribs, meaty side facing up. Create a aluminum foil, low tent (making sure it is completely closed, enough to trap in steam) and leave the ribs in the 250 oven for at least 2 hours to become tender and completely ‘fall off the bone’ dewicious.
This was KILLER! My husband is a meat connoisseur of sorts (his brother goes to national bbq rib competitions and wins) and couldn’t get over how amazing these were. I’ve found my new rib go-to.
Oh and I added scallions to the sauce, but I always add scallions.
Ahhh – thank you for the technique – there was much more meat on the ribs we used (it was almost like a pork belly if I remember correctly) so it was soft enough as is.. but your technique would be perfect the next time I have some ribs I will surely try it out.
Do the ribs have to be parboiled?
Ribs are on the top of my list for last food to eat if i were on death row!!!! They are succulent, packed with sticky sauce and just so naughty! I love this post. Looks finger licking!

I actually have the Korean Red Bean Paste – it is delicious on rice – though a bit spicy, and lasts forever. I cannot wait to try these ribs to have another reason to use the paste. And, these look, and sound really unique and delicious.

You are so lucky to have someone in your family who also has a passion for food! I am not so lucky. There is absolutely no one in my life who is a foodie. Not even friends, coworkers or other relatives. How weird is that? No one is obsessed with cake. I admire passion in something and it is so fantastic your mother is there to drool over recipes with you! Great looking ribs!

I saw some gorgeous pork ribs at the butcher’s so I now know what I’m going to do with them!
This looks delish. On another note, I actually hate fried chicken in general but Korean fried chicken is to die for!! There is this franchise that hit DC/Virginia area called Bonchon chicken. It’s a Korean fried chicken chain and we just love it. I think the chicken is marinated in a kimchi style marinade because I can definitely taste it. They have the regular and the spicy one and they usually eat it with sliced radish on the side to make it easy for you if it is too spicy.

No other dish can be a unique as the southern kentucky fried chicken recipe. One of the old favorites among households in the southern part of America and it gained popularity that even fast-food industries want to get their hands on it. The southern version of the world famous recipe can be a great gastronomic experience for you so hold on to your seat and get a hold of things needed to make Colonel Sanders proud of you.
I made korean chilli pork last night with a similar marinade. Gochujang is a staple in my fridge!

But yeah, I love it when mums do it their way anyway, regardless of recipes or instructions! they are more loveable that way. I was lucky enough to enjoy my parents’ pork ribs this past weekend at our annual picnic and it was wonderful! I don’t know why mom’s cooking always hits the spot.
This “Korean fried chicken” is absolutely mouthwatering! Chicken or rib, my tummy would be happy either way. That said, I’d love to see your post on the chicken, too. I remember enjoying it a lot as a kid but haven’t had it since.

Aside from the flour coating, it’s not all that far off from being a proper Korean dish in of itself.

And you know what, I change my mind very, very ridiculously too when it comes to what to make, sometimes I’m halfway through chopping vegetables for a dish and I’ll change my mind, and make something else (using the same veges though, I don’t like waste) 🙂
