It runs in my family to be compulsive chocolate hoarders. This disease is particularly evident around Christmas and Easter time – or more specifically, the days following Christmas and Easter when holiday chocolates start to see a decline in prices. Our first instinct is to buy as much chocolate as we can. In fact, one day, many many months after Easter, my sister took me aside and showed me that she had hid boxes and boxes of Lindt’s Lindor Balls under her bed. Apparently she had purchased them in an after Easter sale and had been slowly savouring them – eating one Lindt ball a day!
Lindor is part of Lindt’s chocolate collection where delicious chocolate enrobes a smooth filling. Once you bite into the outer shell, the filling starts to melt.
When Sarah from Lindt Australia sent through a lovely box of Lindor Chocolate squares, I knew immediately what I wanted to make of them. Inspired by the Lindor range, I wanted to make a dessert that had an outer shell and a rich and gooey center, similar to the taste sensation of eating a Lindor chocolate of course!
This warm chocolate cake, also commonly known as a Fondant, was adapted from Gordon Ramsay. It was a dessert served in one of the episodes of the F word. It is my “go-to” recipe when I have chocolate loving guests. It’s very easy to make – takes less than 10 minutes to prepare and- you can make this ahead of time, spoon the chocolate batter in the molds and bake it 15 minutes before you want to serve dessert. It is fool-proof. Honest!
Do you get inspiration from the weirdest conversations? I do! As I was contemplating on this dessert, I was chatting with one of my friends and mentioned that I had sent an email to someone we both knew some weeks ago and despite constant follow ups, I still had not received anything back. She said to me “Don’t bother asking Mrs. XX for anything – the inbox of Mrs. XX is like the black hole. Once you send something, don’t ever expect to get it back!”
A-ha!
So I dropped some white Lindor squares into the chocolate “black hole” and watch it sink into that chocolatey darkness before baking. And, unlike Mrs. XX’s inbox – while the Lindor squares were a gooey, delicious and molten mass after baking, I did manage to get all that white chocolate back!

50 grams unsalted butter, plus extra to grease

2 teaspoons cocoa powder, to dush

50 grams good quality bitter chocolate (I used the Lindt blocks 70%), cut in pieces

1 egg yolk
-
1 egg
-
60 grams caster sugar
-
50 grams flour
-
4 Lindor squares
-
Whipped Cream or Ice Cream to serve
-
Preheat the oven to 160C (fan forced)
-
Butter two ramekins (about 7.5 cm in diameter) then dust with cocoa powder, shake out the excess

Melt the chocolate and butter in a heat proof bowl in the microwave, around 20 seconds. Stir to combine until fully incorporated.

Using an electric whisk, whisk the egg yolk and egg and sugar together until pale and thick, then add the chocolate mixture. Fold in the flour and divide the chocolate mixture between the ramekins.

Drop in the Lindor squares and allow to sink completely into the chocolate mixture (if you don’t it will melt too quickly). You can help the batter out by spooning some more chocolate mixture to cover.

Bake in the oven for 10 to 12 minutes.

Turn the fondants out on to plates. Serve with a dollop of whipped cream or ice cream.

Love the story about your sister and the chocolates under her bed! Sounds like my cousin, who was allergic to it, couldn’t resist it, and hid her stash from her mother . Of course we all knew she ate them, because she invariably had an allergy attack!

My best chocolate hoarding experience was when I gave up chocolate for lent when I was little. My Mum would buy me chocolates after school quite often, so I would put these away in the freezer during lent, along with any other chocolate anyone gave me, and by the time easter came I had quite a stash! Am sure I probably made myself ill eating it too quickly.
I have fallen into a black hole of chocolate-y, gooey goodness and I never want to come out! The saving grace is that this recipe is for 2 – any more and I’d truly be doomed. An inadequate thank you for sharing the recipe and these gorgeous pics!

You really cannot have too much chocolate, especially if it’s good stuff like Lindt. The gooey centre of your fondant has me drooling (not a pretty picture considering I’m at work!)
